"Tacos Baja "

 

Tacos Baja style, well known fish tacos in Ensenada, Mexico. "For good reason, batter-fried fish tacos are "possibly the most well-know street food of northern Baja," The Baja California Cookbook (Ten Speed Press). Vendors in Ensenada often use shark, because it's cheap and available, but "you can make a comparably delicious albeit much more expensive version, using a meaty white fish such as halibut." Cod and grouper are options.

A great Baja fish taco is served on a from-scratch tortilla and topped with red or tomatillo (green) salsa, pico de gallo, and shredded cabbage. To me, though, it's the white sauce that "makes a fish taco a fish taco." and the simple version here "taste like home."

"Because I believe, that the constant practice on the same thing over and over make you expert on what ever you are doing. In this case, we had made lots of enchiladas over the time, the recipe often has been modified for the better, over the time we had add or switch some ingredients, the way how to cook the meat (the stuffing), the salsa and how to garnish our final product.
